I have always used the batteries from academy. the other ones are higher and many say they last longer but I have always had good luck with academy's

Are you running the standard amount of draw? You dont have a large stereo or anything right? Or a full GPS plotter with 19inch screen you run all day and night? If so, then I would look into a nice deep cycle or two. But if you are just using the standard stuff, the normal battery will suffice. Walmart, Autozone, Academy. Just shop around.

Are Interstate batteries any better as a starting battery, relative to others?

Honestly, unless you are talking the difference between gel vs wet cell batteries, a battery is a battery. All wet cell batteries now a days seem to be of the no maintenance variety, have multiple options for size, terminals, mounting etc. Your normal everyday interstate will be just as fine as a Everlast Gold Platinum blah blah battery.
All of that just to say... Yes, an interstate will be just fine.

no i run 2 batteries, but nothing special, stereo one amp, bilge pump, and i have ballast pumps but they don't run unless the boat is on anyway.

I have 4 batteries, since it wouldn't look good if I broke down, but I designate two cranking batteries for each motor and two deep cycles for all my accessories. Most every dead battery case we see is because the cranking battery is wired to the stereo system and everything else.
